Banana Bread on the go

When Kris and I had our date night last week, Eli went to Mama and Papa's house. When I asked him if he wanted to go over there he said, "sure only if Mama and I can make banana bread." Now you see they bake and cook together regularly so this wasn't a surprise. So before we left our house we measured all the ingredients and packed everything up to take to Mama's. I didn't want her to always have to use all her own ingredients and banana bread is ALOT of ingredients! Boy was it yummy! The recipe that I use was given to me by an elderly lady named Eleanor about 10 years ago, give it a try next time!

Cream: 1 c. margarine or butter and 2 c. sugar
Add: 2 tsp vanilla, 2 tsp. lemon juice and 4 eggs
Add: 2 c. mashed bananas ( I freeze min after they go bad)
Add: 3 1/2 c. flour, 1 tsp salt, 2 tsp. baking powder, 2tsp. baking soda
Fold in: 1 c. sour cream
Bake for about an hour at 350. If I do these mini loaves I can get about 10!
